I want to be able to copy a text (⌘C) and then, before pasting it (⌘V), be able to remove the formatting of the text by using another combination (for example ctrlC)
The question is, how do I make my Mac do that?

You've asked in the AppleWorks forum but as you apparently have Mountain Lion (which can't run AppleWorks) you presumably aren't asking about that specific program.
Some programs have a 'Paste without formatting' or 'Paste as text only' facility. In its absence, the easiest way is to paste the text into TextEdit in plain text mode and then copy it out again.
You've posted this question in the AppleWorks community, which seems odd, considering your profile says you are using OS X Mountain Lion, under which you cannot run Apple's long discontinued productivity application AppleWorks (the topic in this community).
In Mountaing Lion, the menu command you are looking for is Paste and Match Style, found in the Edit menu. Apple has not assigned a keyboard shortcut for this menu item, but you can do so in System Preferences > Language and Text > Input Sources > Keyboard Shortcuts
Choose Application Shortcuts.
Click the plus sign
Follow the instructions.
